Rise and Shine Muffins


  • 1 pound breakfast sausage
  • 2 cups pancake mix
  • 1 cup milk
  • 6 Tbsp butter, melted
  • 1 egg
  • 1 cup shredded cheese


  1. Preheat the oven to 375 degrees. Spray your muffin tin with non-stick spray.
  2. Brown the sausage until cooked through. Drain and set aside.
  3. While your sausage browns, mix together your pancake mix, milk, butter and egg until barely combined. Add sausage and cheese and stir to combine.
  4. Portion your muffins and bake for 20-25 minutes.
