Marry Me Chicken

  • 3-4 large chicken breasts
  • 2 Tbsp olive oil
  • 3 cloves of garlic
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1 Tbsp dried oregano
  • 1 Tbsp dried basil
  • 1-2 tsp red pepper flake
  • 4 oz sun dried tomatoes

  1. Preheat oven to 375 degrees.
  2. Heat cast iron (or oven safe skillet) over medium high heat with the olive oil. Butterfly the chicken and separate each breast into 2 pieces. Season both sides of chicken breasts with salt and pepper.
  3. Sear the chicken in the pan for 4 minutes per side. Remove from the pan and set aside while building the sauce.
  4. Add garlic to the pan and cook until fragrant (30 seconds to a minute). Add chicken broth, heavy cream, basil, oregano, and red pepper flake. Simmer sauce for 5 minutes or until it begins to thicken. Add sun dried tomatoes and stir.
  5. Return chicken to the pan with the sauce. Spoon the sauce over the chicken.
  6. Bake for 15-20 minutes, or until chicken is cooked through.
