Cinnamon Sugar Banana Muffins
Ingredients
- 2/3 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2/3 cup mashed bananas (about 2 bananas)
- 1 tsp vanilla extract
- 1 2/3 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 3 Tbsp butter, melted
- 1/4 cup granulated sugar
- 1/2 tsp ground cinnamon
Method
- Preheat oven to 375 degrees. Grease a 12 cup muffin tin with cooking spray.
- In a medium bown, combine the sugar, oil, and eggs with a whisk. Add in the bananas and vanilla, and whisk to combine.
- Add in flour, baking soda, salt, and cinnamon, and stir until just combined with a rubber spatula.
- Using a size 16 cookie scoop, portion out 12 muffins.
- Bake for 17 to 20 minutes, or until the top no longer looks wet and a toothpick comes out clean.
- Allow the muffins to cool for 10 before removing from the pan. Then set on a cooling rack and allow them to cool until you can handle them safely.
- Combine the cinnamon and sugar in a small bowl. Melt the butter in a separate small bowl. Dip the muffin tops into the butter and then intot he cinnamon-sugar mixture. Serve warm or allow to cool and store covered at room temperature.
